Work:

Kristi Walker found the demo here and enquired about the .VTT file referenced therein. 

To my knowledge, we're not automatically producing that file during our encoding process so we'll need to do it ourselves. 

I found this post about an open source script for creating the required files, and started installing the prerequisite command line packages FFMPEG & ImageMagick.
